Ingredients

  • 1 lb shrimp peeled and deveined
  • 1 Cup coconut milk
  • 4 cloves garlic crushed
  • 1/2 piece ginger root finely chopped
  • 1 Teaspoon ground coriander
  • 1/2 Teaspoon ground turmeric
  • 1/2 Teaspoon ground cumin
  • 1/2 Teaspoon hot chili powder
  • Salt and pepper to taste
  • 2 Tablespoons olive oil
  • Small bunch of fresh chopped coriander to serve

Instructions

  • Heat the olive oil in a large skillet over high heat. Add the ginger, crushed garlic, turmeric, cumin and chili powder, and cook, stirring, for about a minute until the spices release their aroma.
  • Add the shrimp and shake the pan so they spread in an even layer. Cook for about 3 minutes, then pour in the coconut milk. Season with salt and pepper, stir, and bring to a gentle simmer for about 5 minutes, until the shrimp are cooked through and the sauce is slightly thickened. Sprinkle with chopped fresh coriander and serve immediately with rice.
