Ingredients
- 1 lb shrimp peeled and deveined
- 1 Cup coconut milk
- 4 cloves garlic crushed
- 1/2 piece ginger root finely chopped
- 1 Teaspoon ground coriander
- 1/2 Teaspoon ground turmeric
- 1/2 Teaspoon ground cumin
- 1/2 Teaspoon hot chili powder
- Salt and pepper to taste
- 2 Tablespoons olive oil
- Small bunch of fresh chopped coriander to serve

Heat the olive oil in a large skillet over high heat. Add the ginger, crushed garlic, turmeric, cumin and chili powder, and cook, stirring, for about a minute until the spices release their aroma.

Add the shrimp and shake the pan so they spread in an even layer. Cook for about 3 minutes, then pour in the coconut milk. Season with salt and pepper, stir, and bring to a gentle simmer for about 5 minutes, until the shrimp are cooked through and the sauce is slightly thickened.
