Are polenta fries healthy?

Air frying reduces the amount of oil used, making these polenta fries a lighter choice than deep-fried versions. Polenta is primarily a source of complex carbohydrates, which can help you feel satisfied. Because these fries are made from corn-based polenta, they are naturally gluten free and suitable for many diets.

Recipe tips

  • Check halfway through cooking: Air fryers vary, so shake or flip the fries mid-cook to ensure even browning.
  • Adjust seasoning: Salt and pepper are a great base. Add garlic powder, smoked paprika, chili flakes, or herbs like rosemary or thyme for extra flavor.
  • Serve with a dip: A dipping sauce elevates the fries — try garlic aioli, ranch, buffalo sauce, or a simple ketchup-mayo-sriracha combo.
  • Cut thickness matters: Thinner fries cook faster and get crispier; thicker pieces will stay creamier inside and require more time.

Ingredients

  • 18 oz Polenta log (500g)
  • a pinch Salt
  • a pinch Pepper
  • Olive oil spray or light cooking oil

Instructions

  • Slice the polenta log into sticks about ½ to ¾ inch thick. Place the pieces in a bowl.
  • Spray or drizzle olive oil over the polenta pieces so they’re evenly coated. Season with salt and pepper (and any other spices you like).
  • Arrange the polenta fries in a single layer in your air fryer basket without overlapping. Air fry at 380°F (about 193°C) for 18–20 minutes, shaking or turning halfway through to promote even crisping. Cook time will vary with air fryer model and fry thickness.
  • Remove when golden and crisp, and serve immediately with ketchup or your favorite dipping sauce.

Notes

Refer to the step photos above to see suggested ways to slice the polenta for fries.

If you cut your fries thinner, reduce the cooking time accordingly. Thicker pieces may need a few extra minutes to heat through.
