The weather in Boise is finally improving, and I couldn’t be happier. Sun and warm temperatures lift my mood and get me moving—give me sunny skies and 70+ degrees and I’m in my element. The sunshine instantly brightens my outlook; without it I become gloomy and irritable, something my husband can attest to from our long winter months.
Now that spring has arrived, mornings are alive with birdsong, sweaters are tucked away, and flip-flops are back in rotation. Patios are open, outdoor dining feels effortless, and we can enjoy the sun warming our skin again. It feels like a little bit of magic.
Spring brings so much promise: longer days, clearer skies, backyard barbecues, swimsuits, water sports, road trips, picnics, bike rides, cold drinks and pool days. It’s a season full of possibilities, and it feels like an invitation to enjoy life outdoors for months on end.
Just yesterday my husband and I met at a neighborhood café and sat on the patio for half an hour. He worked while I read, and we both soaked up some much-needed Vitamin D. A few days earlier that simple pleasure would have been unlikely, but with Daylight Saving Time in effect, everything felt brighter and more relaxed. Summer, you’re on my radar.

To celebrate the change in season I’ve been making more salads at home and experimenting with fresh, spring-inspired dressings. Today I’m sharing my Lemon Citrus Vinaigrette (100% Paleo). It’s light, bright, tangy and incredibly versatile. My husband calls it his new favorite paleo recipe—he’s been pouring it over spinach, massaged kale, mixed herb salads and lettuce. It’s a reliable vinaigrette that comes together quickly, which is exactly how I like my recipes.

Description
This Lemon Citrus Vinaigrette is light, healthy, gluten-free, dairy-free and Paleo-approved. It’s a versatile, flavorful dressing that brightens any salad.
Ingredients
- 1/2 cup extra virgin olive oil
- 1/2 cup freshly squeezed lemon juice
- 4 garlic cloves, grated
- 1 tsp honey
- 1 tsp dried oregano
- 1/2 tsp freshly ground black pepper
- 1/4 tsp sea salt
Instructions
- Place all ingredients in a mason jar or small container. Secure the lid and shake vigorously until the ingredients are well combined.
- Use immediately, or store in the refrigerator until ready to use. Shake well before each use.
