Looking for a Halloween dessert that’s both creepy and crowd-pleasing? These zombie brain cupcakes are easy to assemble, look outrageously fun, and taste delicious. The contrast between the dark chocolate cupcakes and neon green filling and frosting makes them perfect for a party centerpiece.

Halloween is my favorite holiday — I love paranormal stories, possessions, unsolved mysteries and, of course, zombies. For this dessert I leaned into the classics: brains and slime, with a chocolatey base that keeps these cupcakes rich and indulgent.

Zombie Brain Cupcakes
These cupcakes combine a deep black chocolate base, a gooey green filling, and a neon green buttercream shaped into brain domes. They’re straightforward to make and easy to customize to your preferred level of gross-out factor.

Black Velvet Cupcakes
The cupcakes start with a black velvet chocolate batter. Using black unsweetened cocoa (or extra dark cocoa) gives an intense chocolate flavor and a dramatic black color without relying on a lot of food coloring. The batter is mixed by combining dry and wet ingredients separately, then incorporating them together and finishing with hot coffee or boiling water for a smooth, moist cake.

Gooey Slime Filling
A surprise filling makes these cupcakes extra fun. For an oozy center, melt bright green candy melts with heavy cream to make a ganache that resembles slimy brain matter. If you prefer something less sweet, a neon-tinted boxed vanilla pudding also works well as a filling.

Zombie Brain Frosting
The brain-shaped buttercream is the showpiece. I flavor the frosting with a touch of mint (mint pairs nicely with chocolate) and tint it neon green. To shape each brain, scoop domes of frosting with a large ice cream scoop, freeze briefly to firm them up, then place the domes on top of the cupcakes. Pipe a central line with a small round tip and add zigzag rows on each side to mimic brain folds — it’s simple and realistic-looking.

This method produces plenty of frosting, which helps when creating full, rounded brains. Freezing the scooped domes for a short time makes them easier to transfer and pipe over without losing their shape.


Brain Goo Topping
To finish the effect, drizzle a glossy, edible “brain goo” over the piped brains. A simple mixture of light corn syrup and neon green food coloring creates a slimy shine that elevates the presentation. It’s optional but highly recommended for the best spooky impact.


These cupcakes are easy to personalize. For a more realistic “human” brain, tint the buttercream pink or red and switch the corn syrup to red food coloring for a bloodier look. For a different surprise center, try cherry pie filling for a sweet-and-gory twist.

Zombie Brain Cupcakes
Black velvet cupcakes filled with neon green filling and topped with mint buttercream shaped into brains — a fun Halloween showstopper.
Ingredients
Black Velvet Cupcakes:
- 1 and ½ cups all-purpose flour
- 1 and ½ cups granulated sugar
- ½ cup unsweetened cocoa powder, sifted
- ¼ cup black unsweetened cocoa powder, sifted
- 1 and ½ teaspoons baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 2 large eggs, room temperature
- ½ cup vegetable oil
- ¾ cup buttermilk, room temperature
- 2 teaspoons pure vanilla extract
- ½ cup hot coffee or boiling water
Slime Filling (see notes):
- 1 package bright green candy melts
- ⅓ cup heavy cream
Neon Green Mint Buttercream:
- 1 cup unsalted butter, slightly softened
- 1 cup shortening
- ⅛ teaspoon salt
- 8 cups powdered sugar, sifted
- ½ cup heavy whipping cream
- 2 teaspoons pure vanilla extract
- 1 and ½ teaspoons pure mint extract (optional)
- Few drops neon green food coloring
Brain Goo Topping:
- ½ cup light corn syrup
- Few drops neon green food coloring
Instructions
For the Black Velvet Cupcakes:
- Preheat oven to 350°F (177°C). Line two 12-cup muffin pans with liners.
- Sift and whisk together flour, sugar, cocoa powders, baking powder, baking soda and salt.
- Whisk eggs, oil, buttermilk and vanilla in a separate cup. Combine wet and dry ingredients, then stir in hot coffee or boiling water until smooth. Batter will be thin.
- Fill liners two-thirds full and bake 14–16 minutes, or until a toothpick comes out clean. Cool in pans 10 minutes, then transfer to racks to cool completely.
For the Slime Filling:
- Microwave candy melts and heavy cream in a heat-safe bowl in 30-second intervals until smooth. Cool slightly, stirring occasionally.
- Core the center of each cooled cupcake using the bottom of a piping tip or small corer. Fill with the green ganache.
For the Neon Green Mint Buttercream:
- Beat butter, shortening and salt until light and fluffy (5–6 minutes).
- On low, add half the powdered sugar one cup at a time. Add heavy cream, vanilla and mint, then incorporate.
- Add remaining powdered sugar one cup at a time on low. Increase speed and whip until light and fluffy (5–7 minutes). Tint with green food coloring.
For the Brains:
- Use a large ice cream scoop to form frosting domes. Smooth excess with a butter knife.
- Place domes on each cupcake. Transfer remaining frosting to a piping bag with a small round tip. Pipe a line down the center of each dome, then pipe 2–3 rows of zigzags on each side to mimic brain folds.
For the Brain Goo Topping:
- Stir green food coloring into light corn syrup until evenly tinted.
- Spoon or drizzle the goo over the piped brains for a glossy, slimy finish.
Notes
- For a less-sweet filling, tint prepared vanilla pudding with neon green food coloring.
- Store leftover frosted cupcakes in an airtight container in the refrigerator for 3–4 days; bring to room temperature before serving. Unfrosted cupcakes keep at room temperature 1–2 days.
- Make frosting ahead and refrigerate up to 1 week, or freeze for longer storage. Let come to room temperature and re-whip before use.
