These tiramisu pancakes make a decadent weekend breakfast or brunch. Fluffy pancakes are layered with a creamy mascarpone filling flavored with espresso and a hint of brandy, then finished with a luscious chocolate sauce.

Ingredients

For the pancakes:

  • 2 tbsp unsalted butter, melted
  • 2 eggs
  • 1 ½ cups milk
  • 1 cup all purpose flour
  • 2 tsp baking powder
  • 1 tsp vanilla extract

For the filling:

  • 8 oz mascarpone, at room temp.
  • 1 cup heavy whipping cream
  • ¼ cup powdered sugar
  • 2 tsp espresso powder
  • 1 tsp brandy

Topping:

  • Your favorite chocolate sauce

Instructions

  1. In a bowl, whisk the melted butter with the eggs. Stir in the milk, then add the flour, baking powder and vanilla. Whisk until the batter is smooth and free of lumps. Pour portions onto a hot non-stick pan or griddle and cook until golden brown on both sides.
  2. In a separate bowl, combine the heavy cream, powdered sugar and espresso powder. Whip until soft peaks form. In another bowl, beat the mascarpone until smooth. Fold the whipped cream and brandy into the mascarpone until evenly combined.
  3. Let the pancakes cool slightly, then spread a thin layer of the mascarpone filling between each pancake. Top the stack with a generous scoop of filling and drizzle with chocolate sauce. Serve immediately.
