You might think pink cookies would be off-putting to some, but not Jeff. He’ll carry my purse and even tolerates the occasional melted candy bar inside. When it comes to these strawberries-and-cream cookies, he won’t turn them down—he’s happy to have them anytime I make them. I expect your family will love them, too.
I’ve been sharing a lot of cookie recipes while preparing for our church youth conference. I’ve enlisted our youth group, some ladies from church, and Jeff as my official taste testers. Someone has to be sure the recipes are family-approved!

Preheat oven to 350°F (175°C).

Line two baking sheets with parchment paper.

In a large bowl, combine the cake mix and baking powder. In a separate bowl, whisk together the eggs, oil, and vanilla until well blended.

Pour the egg mixture into the cake mix and stir until a dough forms. Mix in the white chocolate chips.

Drop rounded balls of dough onto the prepared baking sheets. Because the cookies spread, make the dough balls taller than wide and space them about 2 inches apart.

Bake for 10 minutes. Do not let the cookies brown. Once slightly cooled, transfer to wire racks to finish cooling. They may seem a bit underbaked at first; they will firm up as they cool. Allow at least 10 minutes before serving. Enjoy!

Cookies stay fresh covered at room temperature for up to one week. You can prepare the dough ahead and refrigerate it for up to three days—bring it to room temperature before portioning. Baked cookies freeze well up to three months. You can also freeze unbaked dough balls for up to three months; bake frozen dough balls an extra minute without thawing.
