Slow-Cooked Tomato Basil Soup Recipe for Cozy Weeknights

Crock Pot Tomato Basil Soup

Ingredients

  • 3- 28- ounce cans whole peeled tomatoes
  • 3 tablespoons olive oil
  • 3 large carrots peeled and finely diced
  • 2 medium sweet onions finely diced
  • 4 cloves garlic peeled and left whole
  • 1 teaspoon crushed red pepper flakes
  • 1 tablespoons salt
  • 1 quart chicken broth
  • 10 basil leaves plus more for garnish
  • Freshly grated Parmesan or sour cream for garnish, optional

Instructions

  • Place all ingredients in the slow cooker. Cover and cook on low for 5 to 7 hours, until the flavors meld and the vegetables are tender.
  • Let the soup cool slightly, then puree in batches in a blender until completely smooth. Return the soup to the slow cooker and keep on low if not serving immediately.
  • Garnish with additional fresh basil and a sprinkle of grated Parmesan or a dollop of sour cream, if desired.
