Orange Doughnuts with Orange Glaze

Ingredients 

For the doughnuts

  • 3 ¼ cups flour
  • 2 teaspoons baking powder
  • Pinch salt
  • 2 eggs, slightly beaten
  • cup sugar
  • 1 teaspoon vanilla
  • 1 teaspoon grated orange peel
  • cup orange juice
  • ¼ cup butter, melted, 1/2 stick

For the glaze

  • 2 cups powdered sugar
  • 1 teaspoon grated orange peel
  • 3 tablespoons orange juice

Instructions 

  • In a medium bowl, whisk together the flour, baking powder and salt; set aside. In a large bowl, beat the eggs, sugar and vanilla until thick and pale. In a small bowl, mix the grated orange peel, orange juice and melted butter.
  • Add the orange juice mixture and the dry ingredients alternately to the egg mixture, beating with an electric mixer just until combined after each addition. Cover the dough and chill for at least 2 hours.
  • On a lightly floured surface, roll the dough to 3/8-inch thickness. Cut with a floured 2½-inch doughnut cutter. Fry in oil heated to 375°F, about one minute per side, turning once. Drain the doughnuts on a rack set over paper towels.
  • Whisk the glaze ingredients together until smooth. Dip the tops of the doughnuts into the glaze and place them glazed-side up on the rack to set.

Notes

  • For a lemon variation, substitute lemon juice and lemon zest for the orange.
