Here’s what we’ll be eating this week:

Meatless Monday: Sweet + Smoky Quesadilla Casserole. A satisfying, meat-free meal to kick off the week. Follow the recipe or adapt it with leftover vegetables or other ingredients you have on hand for extra bulk.

I choose Monday as a meatless night for our family because it’s budget-friendly and better for the environment. My meat-and-potatoes husband goes along with it—partly because I often make him a special dessert after dinner. It’s a fair trade!

Tuesday: Slow Cooker Pork Roast and Cherries. One of Andy’s favorites, made in my favorite slow cooker. Great for an easy, flavorful weeknight meal.

Wednesday: Turkey Mac and Cheese Stir Fry. A kid-friendly twist on stir-fry—think stir-fried rice, but less messy and more familiar for little eaters.

Thursday: Slow Cooker Lemon Rosemary Lentil Soup. A second meatless option this week. The bright lemon and fragrant rosemary pair perfectly with hearty lentils.

Friday: Bacon Double Cheeseburger Pizza. A fun way to start the long weekend—why choose between pizza or burgers when you can enjoy both?
