Slow Cooker Mediterranean Whole Chicken

Yield: Serves 4

Prep Time: 10 minutes

Cook Time: 8 hours (low) or 4 hours (high)

Ingredients:

  • 1 tbsp ground oregano
  • 1 tbsp olive oil
  • 2 tsp lemon zest
  • 3 garlic cloves, minced
  • 1 tsp kosher salt
  • 1 tsp ground pepper
  • 1 small whole chicken (about 4 lbs)
  • 2 tbsp lemon juice

Directions:

  1. In a small bowl, combine the oregano, olive oil, lemon zest, minced garlic, salt and pepper to make a paste.
  2. Crumple four to five sheets of foil into loose balls and place them in the bottom of the slow cooker.
  3. Set the chicken on top of the foil balls to keep it elevated and prevent sticking. Rub the seasoning paste all over the chicken, inside and out. Drizzle lemon juice over the top.
  4. Cover and cook on low for 8 hours or on high for 4 hours, until the chicken is cooked through and tender.
  5. Remove the chicken carefully, let it rest a few minutes, then serve whole or carved with rice and vegetables. Enjoy!
