Make a Chilli Ristra: Step-by-Step Guide to Drying and Hanging Peppers

Ristras are strings or arrangements of chili pepper pods hung to air-dry. Originating in South America as a practical way to preserve surplus peppers for later use, ristras are now popular decorative items in kitchens worldwide and are considered symbols of good luck in some cultures.

There are many ways to make a ristra, but the first step is choosing the right chili variety. Long, thin peppers such as cayenne are ideal because they dry reliably. Thicker, fleshier varieties like jalapeños can be used, but they are more prone to rotting rather than drying. If you do use fleshy peppers, hang them in a sunny, well-ventilated spot to reduce the risk of spoilage.

Making a Dried Chili Pepper Ristra

This simple method is quick and effective. You will need:

  • a good crop of fresh chilies
  • a length of fishing line
  • a large sewing needle

When harvesting, leave a short length of stem attached to each pepper; the stem is what you will thread. Tie a large knot at one end of the line and thread the needle onto the other end. Thread each pepper through its stem onto the line. To help the ristra keep an attractive, even shape, hold the needle pointing upward. Insert each stem so the pepper sits at about a 45-degree angle, with the stem positioned higher than the pod. As you slide peppers down the line, rotate them slightly as needed to avoid gaps.

When the string is assembled, hang the ristra where it will receive good light and airflow. A sunny porch is ideal; in cooler climates, a south-facing window works well. As the peppers dry they will generally darken in color. Inspect the ristra regularly and remove any pods showing signs of mold. If mold appears, move the ristra to a more ventilated, drier location until drying is complete.
