Who doesn’t love a classic chocolate chip cookie? When I first began developing gluten-free recipes, I assumed cookies would be difficult, but once you learn to balance the flour, they’re simple and delicious.

Lately I’ve been craving comfort foods — pizza, mozzarella sticks, and especially chocolate chip cookies. I resisted sharing a recipe for the world’s most common cookie, but these turned out so well I had to post them. They photograph beautifully and taste even better.
These cookies are fantastic. You already know the pleasures of a gooey, chocolatey cookie, so I won’t overdo the description, but I will say I was impressed by how well these held their shape, stayed soft, and didn’t crumble. They behave like a traditional cookie should.
I’ve made many gluten-free cookies that ended up crisp and crumbly — these are not those. They’re soft, sturdy, and perfect for serving to both gluten-free and non-gluten-free guests.
