This is more of an inspired idea than a strict recipe—a quick, fresh option when you want something healthy, satisfying, and flavorful for lunch or a light supper.

The creamy avocado pairs beautifully with salty, tangy feta, bright lime, and a touch of red onion. Cherry tomatoes add freshness and texture. Feel free to customize: swap lemon for lime if needed, add cucumber or sliced radish, or stir in herbs like cilantro or basil for extra aroma.

    crumbled feta cheese

    lime juice*
  • 2

    toasted bread**
  • Microgreens,
    for garnish

Instructions

  • In a bowl, combine the cubed avocado, diced cherry tomatoes, finely diced red onion, crumbled feta, and lime juice. Toss gently to combine without mashing the avocado completely—aim for a chunky, creamy texture.
  • Pile the mixture onto toasted bread slices and garnish with microgreens. Serve immediately to keep the toast crisp.

Notes

*If you don’t have lime juice, lemon juice is an easy substitute.
