This fall dessert is rich, aromatic, and perfect for sharing. The brown butter icing elevates the pumpkin cake with a deep, toasty sweetness.
Ingredients
  • 2 3/4 cups all-purpose flour
  • 2 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1/4 tsp ground cloves
  • 1/2 tsp ground nutmeg
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup canola oil
  • 1 cup granulated sugar
  • 3/4 cup brown sugar
  • 3 eggs
  • 1 1/2 tsp vanilla extract
  • 1 (15-ounce) can pumpkin (or 2 cups homemade puree)
  • ICING:
  • 1/4 cup butter
  • 2 tbsp milk
  • 1 1/2 cups powdered sugar
Instructions
  1. Preheat the oven to 350°F (175°C). Generously spray a 12-cup bundt pan with baking spray or grease and flour the pan.
  2. In a medium bowl, whisk together flour, cinnamon, ginger, nutmeg, cloves, salt, baking soda, and baking powder. Set aside.
  3. In a separate bowl, combine canola oil, granulated sugar, and brown sugar until smooth.
  4. Add the eggs, pumpkin, and vanilla to the sugar mixture and mix until fully combined.
  5. Stir in the dry ingredients until the batter is smooth and there are no lumps.
  6. Pour the batter into the prepared bundt pan and bake for 45–55 minutes, or until a toothpick inserted in the center comes out clean.
  7. Allow the cake to cool completely in the pan, then invert onto a cake stand or large plate.
  8. To make the icing: Melt the butter in a small saucepan over medium-high heat, stirring until it browns and develops a nutty aroma. Remove from heat.
  9. Quickly add the milk, then whisk in the powdered sugar until smooth. The icing will thicken fast, so drizzle it over the cooled cake immediately.
  10. Let the icing set, slice, and enjoy.
