Authentic Bavarian Obatzda Recipe — Creamy German Cheese Spread

Obatzda is a traditional Bavarian cheese spread made with beer. Creamy and buttery with a touch of savory funk, it’s perfect for dipping soft pretzels at Oktoberfest or serving as a quick appetizer any time. Ready in about 5 minutes.

The mild, milky interior and slightly funky rind of Camembert pair beautifully with the subtle bitterness of a weissbier (wheat beer). Sweet paprika adds warmth and color. Obatzda is commonly served as an appetizer alongside bratwurst, sauerkraut, beer brats, and other German snacks.

There are many regional variations. This version skips raw onion in the mix and uses caraway seeds for a classic German note; if you prefer, finely chopped onion or shallot can be folded in instead or sprinkled on top.

Obatzda cheese spread ingredients

  • Camembert cheese: Use a small wheel of Camembert or a French-style Brie with the rind intact. The rind contributes a savory depth; the interior is creamy and buttery. For best texture and flavor, choose a European-style cheese rather than an American imitation.
  • Cream cheese and butter: Cream cheese smooths and tames the tang while a bit of butter adds silkiness and a richer mouthfeel.
  • Beer: A Bavarian weissbier (wheat beer) is traditional and lends authentic flavor. Add a little at a time to reach the desired spreadable consistency.
  • Caraway seeds: Optional but recommended for a subtle rye-bread-like note that suits Bavarian flavors.
  • Sweet paprika: Use sweet (not hot or smoked) paprika for classic color and mild sweetness. Add a pinch of cayenne if you want heat.
  • Chives, onion, or shallot: Traditionally Obatzda includes raw onion or shallot. If you prefer a smoother texture, omit raw onion and finish the spread with finely chopped chives instead.

How to make Obatzda

This recipe is adapted from classic Bavarian preparations and refined to be simple and reliable.

Mashed camembert cheese in a bowl with a fork.

Step 1: Mash the Camembert

Bring the Camembert, cream cheese, and butter to room temperature. Place the whole wheel (rind intact) in a mixing bowl and mash with a fork until the rind breaks into smaller pieces and the cheese softens.

Step 2: Add butter and cream cheese

Add the softened butter and cream cheese to the mashed Camembert. Mix until fully combined and smooth.

Step 3: Add beer and seasonings

Stir in the sweet paprika, caraway seeds, and 2 tablespoons of wheat beer. If you like, add 2 tablespoons finely chopped onion or shallot. Taste and adjust—add another tablespoon or two of beer if you want a softer consistency.

Expert tips

  • Softer, milder dip: Increase the cream cheese ratio for a subtler flavor. Consider adding a touch more paprika to boost color and sweetness.
  • Paprika color varies: Different sweet paprikas range from bright orange to muted red; color differences don’t affect flavor.
  • Serve at room temperature: If you make Obatzda ahead, let it sit 10–15 minutes to soften before serving so it spreads easily.
  • Adjust beer gradually: Start with 2 ounces (about 2 tablespoons) of beer and add more as needed to reach the desired texture.
  • Storage and make-ahead: Prepare up to 3 days ahead and keep in an airtight container in the refrigerator. Freeze for up to one month; texture may change slightly after thawing.

How to serve it

Serve Obatzda with warm pretzels, rye bread, or crisp vegetables such as carrot sticks. It also fits well on a simple abendbrot (a German cold supper) alongside cured meats, pickles, and cheeses.

Bavarian Obatzda (German Cheese Spread)

A creamy Bavarian cheese spread made with Camembert, cream cheese, butter, wheat beer, paprika, and caraway seeds — perfect with pretzels.
Prep Time 5
Total Time 5

Ingredients

  • 8 ounces Camembert cheese (or Brie)
  • 4 ounces cream cheese
  • 2 tablespoons unsalted butter
  • 1 teaspoon sweet paprika
  • 2-4 ounces wheat beer
  • 1 teaspoon caraway seeds
  • 2 tablespoons finely chopped onion or shallot (optional)
  • finely chopped chives (for serving)

Instructions

  1. Bring the Camembert, butter, and cream cheese to room temperature.
  2. Place the Camembert wheel (rind intact) in a mixing bowl and mash with a fork until it breaks into smaller pieces.
  3. Add the butter and cream cheese and mix until smooth and combined.
  4. Stir in 2 tablespoons of wheat beer, the paprika, caraway seeds, and onion or shallot if using.
  5. Mix until evenly incorporated. The spread should be thick but spreadable—add another tablespoon or two of beer if needed.
  6. Serve topped with chopped chives and a light sprinkle of paprika.

Notes

  • Onions optional: Traditional versions include raw onion or shallot; omit them if you prefer a smoother texture.
  • Choose a European-style cheese: Brie can substitute for Camembert; for best results use a French-produced wheel.
  • Milder spread: Add more cream cheese to reduce the pronounced rind flavor; increase paprika slightly for color.
  • Make ahead & storage: Prepare up to 3 days ahead and refrigerate in an airtight container. Let sit at room temperature 10–15 minutes before serving. Freeze up to one month; texture may change after thawing.
