Step by step instructions

Step 1: In a large skillet over medium heat, warm the olive oil and sauté the garlic and red onion for 4–5 minutes, until fragrant and softened.

Step 2: Add the chicken pieces, then season with salt, pepper, and crushed red pepper flakes. Cook 7–8 minutes until the chicken is seared and lightly browned; remove the pan from the heat briefly.

Step 3: Pulse the cherry tomatoes in a food processor until crushed (you should have about 5 cups). Add the crushed tomatoes to the pan with the chicken, stir in basil and oregano, and bring to a boil over medium-high heat. Reduce the heat to low–medium and simmer for 30 minutes, stirring occasionally. Adjust seasoning to taste.

Cherry tomatoes, red onion, garlic, basil and oregano come together in a fresh, savory sauce that pairs beautifully with chicken.

Ingredients 

  • 1 Tablespoon olive oil
  • 1 cup diced red onion, about ½ red onion
  • 1 Tablespoon diced garlic, 3–4 cloves
  • 2 lbs chicken breast, cut into bite-sized pieces
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • a dash of crushed red pepper flakes
  • 2 lbs cherry tomatoes, (about 3.5 cups)
  • 1 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano

Instructions 

  • Heat the oil in a large skillet over medium heat. Add the garlic and red onion and cook 4–5 minutes, stirring occasionally, until fragrant and softened.
  • Add the chicken, salt, pepper, and crushed red pepper flakes. Cook 7–8 minutes until the chicken is seared and lightly browned. Remove the pan from heat briefly.
  • Pulse the cherry tomatoes in a food processor until crushed (about 5 cups). Add them to the pan and stir to combine with the chicken.
  • Stir in the dried basil and oregano.
  • Bring the mixture to a boil over medium-high heat, then lower to low–medium and simmer for 30 minutes. Taste and adjust seasoning as needed. Serve warm over your choice of side.
