Keto Egg Fast Ice Cream
If you’re following the Egg Fast, gather the following ingredients and tools:
- Whole raw eggs (yolks and whites)
- Butter (melted)
- Cream cheese (optional)
- Flavoring: flavored extracts or sugar-free syrups
- Sweetener of choice (allulose or Bocha Sweet are ideal for homemade ice cream). If using sugar-free syrups you may not need additional sweetener.
- An ice cream machine (the Ninja Creami is highly recommended)
- Large mixing bowl or blender
- Airtight containers or Ninja pint containers for freezing

Because this is an Egg Fast recipe, there’s no heavy cream, coconut milk, almond milk, or whipping cream — just the Egg Fast basics: eggs, butter, optional cream cheese, and flavor/sweetener.
With the Ninja Creami you don’t need to cook a custard first — the machine transforms a frozen liquid base into creamy ice cream.
Options for Flavor, Texture and Sweetness
- Skinny Syrups (sugar-free syrups) — a quick way to add flavor
- Flavorall Drops — many flavors sweetened with stevia
- Tara gum or guar gum — a tiny amount improves mouthfeel (use sparingly; 1/4 tsp adds about 1 carb per pint)
- Collagen powder — an alternative to gums that also improves texture
- Stevia drops — concentrated liquid sweeteners in many flavors
- Unsweetened flavor extracts plus a separate sweetener (stevia, allulose, Bocha Sweet, Swerve). Example: 1 tbsp vanilla extract + 2–3 tbsp allulose for a vanilla pint.
Two Keto Ice Cream Helpers
Keto Chow is an excellent base for ice cream and protein desserts. Skinny Syrups provide many sugar-free flavor options (some use stevia/monk fruit; others use sucralose). Use what fits your plan and taste.
Not Doing the Egg Fast? Other Ways to Use This Base
The base is very flexible. With an ice cream maker you can adapt it for egg-free, dairy-free, lower-fat (PSMF) or higher-protein versions while staying keto-friendly.
Ideas:
- Substitute coconut milk, almond milk, heavy cream, or low-carb yogurt when not on the Egg Fast
- Turn Keto Chow or other protein shakes into ice cream
- Use the Ninja Creami mix-in function to fold in sugar-free chocolate chips, cookie crumbles, or berries for texture (think DQ Blizzard)
Don’t Have a Ninja Creami?
No problem — this recipe also works in traditional ice cream makers such as Cuisinart or any machine you own. Just follow your machine’s instructions for churning and freezing.
Prefer Not to Use Raw Eggs?
You can use hard-boiled or fully cooked scrambled eggs blended into the mixture instead. The texture and flavor remain excellent — see the video example for a butter-coffee flavored version made with boiled eggs.

Rich, creamy and Egg Fast compliant. Mix, freeze and churn for homemade keto ice cream.
Ingredients
- 4 whole large eggs
- 4 tbsp butter, melted
- 2 tbsp cream cheese (optional)
- 1/4 tsp tara gum or guar gum (optional) OR a scoop of collagen
- Sweetener and flavor of choice (see notes)
Instructions
- Beat 4 eggs until well mixed, then beat in melted butter (use a mixer, blender, or whisk).
- Stir in sweeteners and flavorings to taste.
- Pour the mixture into a pint container. If below the fill line, add water to top up for the Egg Fast. If not on Egg Fast, top up with cream, coconut or almond milk if desired.
- Freeze the container for 24 hours.
- Remove the pint and process in your Ninja Creami on the Lite cycle. If the texture is not creamy, run a Re-spin.
- Leftovers: smooth the top with a spoon and refreeze. When ready to serve, process on Lite or let soften at room temperature — high fat content often softens without a respin.
- If using another ice cream maker, follow that machine’s instructions and skip the Ninja-specific steps.
