
Simple Keto Mozzarella Sticks

Ingredients
- 6 string cheese sticks or cut mozzarella into twelve 4″ x 1″ sticks
- 2 large eggs
- 10 ml milk of choice (about 2 tsp)
- 37 grams coconut flour (1/3 cup)
- 100 grams finely crushed pork rinds or keto breadcrumbs
- 1 TBS dry Italian seasoning adjust to taste

Cut the string cheese in half to make 12 sticks. In a wide bowl whisk together the eggs and milk until smooth. Place 2 tablespoons of the coconut flour in a second wide bowl and reserve the remaining coconut flour for later.

Mix the crushed pork rinds with the Italian seasoning using a fork. Transfer about one quarter of this mixture into a third wide bowl and leave the rest to the side. Dredge each cheese stick in the coconut flour to coat lightly.

Dip the floured cheese into the egg mixture and turn to cover completely. Lift and let excess egg drip back into the bowl, then roll the stick in the pork rind mixture to coat. Gently press the crumbs onto the cheese so they adhere.

For an extra-crisp coating, return the coated stick to the egg, let it drip, and coat a second time in the pork rind mixture. Place each double-coated stick on a lined baking sheet.

Repeat until all sticks are coated, adding more coconut flour or pork rind mixture as needed. Freeze the prepared sticks on the baking sheet for at least 1 hour, or until completely firm. Freezing helps prevent the cheese from leaking during cooking.

Preheat an air fryer to 390°F (about 200°C) and lightly spray the basket with cooking spray. If using an oven, preheat to 400°F (205°C) and line a baking sheet with parchment paper. Remove the frozen sticks from the freezer.

Arrange the sticks in a single layer with space between each. Air fry at 390°F for 6–7 minutes or until golden and crisp. In the oven bake at 400°F for 6–10 minutes, watching closely so they don’t leak or brown too quickly.

After cooking, let the sticks rest in the air fryer drawer or on the baking sheet for about 3 minutes to firm up before serving. Serve immediately while still warm and crispy.
