Spicy Bacon and Cheese Fries Recipe for Game Day Snacks

You’re right — this isn’t fancy or frilly. But these spicy bacon cheese fries hit all the right notes. Crispy fries, smoky bacon, spicy jalapeño, and gooey melted cheese combine into a plate that’s hard to resist. For me, this is comfort food at its best; I’d gladly eat it for dinner, especially back in the days when a sports bar plate like this could easily be a full meal.

Get Creative With It

These fries are straightforward, but flexible. Add chili, cheese curds, or a dollop of sour cream if you like. Or keep it simple and enjoy the classic combo of fries, bacon, jalapeño, and cheese. One tip: grate your own cheeses when possible. Freshly grated cheese melts better and tastes cleaner than pre-shredded varieties, which often contain anti-caking agents that can affect melting and texture.

I prefer to deep-fry frozen fries for the best texture. Baking works if you want a lighter option, but deep-frying gives that extra crispiness that holds up under the cheese and toppings. You don’t need to do this every day, but it’s worth the treat when you want indulgent comfort food.

Ingredients

  • 16 ounces frozen fries such as Ore-Ida
  • ½ cup Pepper Jack cheese grated
  • ½ cup Colby Jack cheese grated
  • 2 strips bacon cooked, crumbled
  • 1 large jalapeno sliced

Instructions

  • Cook the fries according to the package instructions. Deep-frying will yield the crispiest results, but baking works if you prefer.
  • Transfer the cooked fries to an oven-safe platter or baking dish.
  • Evenly sprinkle the grated cheeses over the fries, then scatter the crumbled bacon on top.
  • Place the platter under a low broiler for about one minute, just until the cheese melts. Watch carefully so it doesn’t burn, and keep the plate a safe distance from the broiler.
  • Remove from the oven and garnish with jalapeño slices before serving.

Notes

To reduce the heat, omit the jalapeño and use Monterey Jack instead of Pepper Jack.
